대구 간유는 황색 또는 갈색을 띠고 주성분은 트리올레인과 트리팔미틴이다. 비타민 A·D를 함유하고 있기 때문에 의약품으로 쓰인다. 만성류머티즘과 통풍 치료에 이용한다. 대구간유는 그 외에도 관절과 척추의 질병·구루병(곱사병)·야맹증·낭창·피부발진·폐결핵, 또는 얼굴상처의 육아형성촉진(肉芽形成促進) 등에 이용한다. 또한 대구간유에는 비타민 A가 1g당 2,000∼5,000IU 함유되어 있어 유아기 또는 성장기 어린이의 영양식으로도 사용된다.

대구간유가 관절염의 염증과 통증을 완화하는 효과가 있는 이유는 그 속에 들어있는 오메가 지방산 때문이라고 알려져 있다. 오메가 지방산은 체내에 흡수되어 연골(軟骨)세포로 들어가서 연골세포를 손상시켜 관절염을 일으키는 효소의 활동을 억제하는 역할을 한다.

오메가 지방산은 관절의 염증과 통증을 일으키는 효소인 사이클로옥시게나제의 활동을 억제하고, 관절의 염증과 통증을 장기화시키는 염증성 사이토킨이라는 화학물질의 분비를 억제한다고 알려져 있다.

Only cod fish caught during the winter and early spring are used, as the liver oil content is highest at this time of year. The oil is separated from the liver tissues without the use of chemicals. To insure freshness of Carlson Norwegian Cod Liver Oil, the air inside the glass bottle has been replaced with nitrogen.

Natural vitamin E is added to the cod liver oil to protect the freshness of the EPA and DHA both within the bottle and our bodies. Vitamin E prevents oxidation of polyunsaturated oils.
